Here are helpful tips to get you started with your cooking. First of all choose between fillet or whole fish. When choosing a fish for grilling always take in consideration how hearty the fish is and how well can it stand up to the heat of the grill. Choose thicker fillets like halibut, swordfish, haddock, mahi-mahi, tuna, salmon or grouper. Traditionally flounder, sole and other flaky fish have not been suitable for grilling, but now with a barbecue grill mat you are up to the challenge.

Next, cut the fish to smaller portions. This will help you manage the fillets on the grill and at the same time allows your fish to cook evenly. Cutting your fish into portions that have an even thickness  guarantees you don’t have undercooked areas.

Third, marinate the fish and season it well but see to it that you don’t leave your fish in the marinade for more than 30 minutes as this can have a negative effect on the taste of your cooked fish.

When it’s time to grill, always place the skin-side down and on the diagonal. This will create those perfect grill marks on your fish and will make flipping the fish easier owing to this angle. There is a general rule in grilling a fish; it only takes 8 minutes to cook through per inch of thickness, which means about 3 to 5 minutes for each side.

Once your fish is ready to flip, choose a wide spatula preferably with a thin and tapered edge. It will be able to slide smoothly under the fish and is large enough to support it while you flip it.

And lastly, to check if your fish is cooked properly, check the meat to see if it is firm to the touch, flakes easily with a fork and appears opaque.

Now you can place your fish on a platter, put on a few garnishes and enjoy with your family and friends!
